Matka Biryani
- Mutton mix (1 kg )
- Rice basmati (1 kg)
- Onion sliced (2 medium)
- Tomato sliced (3 medium)
- Green chilli (3 to 4)
- Mint leaves (4 tbsp)
- Yogurt (1 1/2 cup)
- Cumin seeds ( 1 tbsp)
- Nutmeg powder ( 1/2 tsp)
- Mace powder (1/4 tsp)
- Red chilli powder (1 1/2 tbsp)
- Turmeric powder(1/2 tsp)
- All spice powder (1 tbsp)
- Food color yellow ( 1/2 tsp mixed in water)
- Dried plums (8 to 10 pcs)
- Lemon slices (1 tbsp)
- Ginger garlic paste (2 tbsp)
- Cumin seeds (2 tsp)
- Salt (1 1/ 2 tsp)
- Cooking Oil (1/2 cup)
Directions
- In a pan add cooking oil and onions, fry until golden brown.
- Now add cumin seeds, saute and then add ginger garlic paste.
- Add mutton and fry until changes colour, Now add all the spices, tomatoes and whisked yogurt.
- Covere and cook on low flame until meat tenders .It can take upto 40 minutes.
- As the meat is fully cooked, dry the excess water and cook until oil separates.
- Boil rice in a pan with salt until 3/4 done. Use sieve and remove excess water.
- In a clay pot add mutton gravy layer wise with boiled rice. In between add mint, green chilli, tomato slices, dried plums, lemon slices and finally on top add yellow food colour.
- Cover the pot and cook on very low flame for 15 minutes.
- Serve hot with raita and salad.
