For Basundi

  • 2-litre full fat or whole creamy milk
  • 200 ml condensed milk
  • ½ Cup sugar

For Flavour and Garnishing

  • 8 Cashew
  • 10 unsalted pistachios
  • 8 Almonds
  • 1 /4 tsp cardamom powder
  • 6 – 8 saffron Strands.


  1. Add whole milk and condensed milk together in a thick-bottomed pan. Whisk it properly in a pan to make it a proper mix.
  2. Place the pan on the stove and on low flame heat to make it hot. Keep on stirring constantly so that milk does sit on the bottom and avoid burn.
  3. Cook on low flame and simmer for 40 to 45 minutes and keep stirring.
  4. Scrape the milk solids from the sides and put it back in the basundi/Milk reduction mixture. 
  5. Now, the basundi mixture has started to thicken.
  6. Add cardamom powder and saffron strands to the basundi mixture and stir it for 5 minutes to set the flavours.
  7. Garnish with chopped almonds or pistachios.
  8. Serve hold or cold in a bowl.
