For Cashew Barfi

  • 1 cup broken Cashew
  • ½ Cup Sugar
  • 1½ tsp of ghee/ Clarified Butter
  • ¼ cup water

For Flavour and Garnishing

  • ½ tsp cardamom powder
  • Varq/Silver leaf


  1. Put cashew in a mixture jar and grind it. Carefully do not grind much otherwise it will release oil. Grind it to make a fine granulated powder.
  2. If the powder is much coarse, sieve it for a fine powder.
  3. To make sugar syrup, take a pan and add sugar to the water and stir continuously for about 2 mins. 
  4. Add cardamom powder, cashew powder, and ghee to syrup and mix well and cook for mixture till it starts leaving the pan and will become a dough. This could take 10 to 12 mins approx
  5. To test – take a small piece from the dough and let it cool down . Then roll it between your thumb and index finger. You should be able to form a non-sticky ball.
  6. Grease the plate with melted ghee/Clarified butter and transfer the mixture to the plate.Or use  parchment paper.
  7. Take a spatula, and gently press it to make it even.
  8. Garnish with varq/Silver leaf
  9. Let it cool for 5 to 7 minutes, and cut into diamond pieces with a sharp knife.
