Serves: 5 – 6 Persons

For Kansar

  • 2 cup thick whole wheat flour (or coarse wheat)
  • 1 cup jaggery
  • 2 tbsp. ghee
  • 100 g powdered sugar
  • Water as requied

For Flavour and Garnishing

  • Chopped and toasted almonds or cashew nuts for garnish

  1. To prepare this lovely dessert, first combine the wheat flour with 1 tablespoon of ghee in a mixing bowl and keep aside.
  2. Next, heat a heavy bottomed pan over medium heat. When it is hot, add 3 cups of water and jaggery to it.
  3. Bring the pan to a boil and once boiling, reduce the heat to low. Now add the remaining ghee, mix well, add the wheat flour and mix well again.
  4. Cover the pan with its lid and let the kansar ingredients simmer for 15 minutes or until all water has been absorbed or evaporated, stirring occasionally.
  5. Then, remove the pan from heat and transfer the kansar to a serving bowl.
  6. Sprinkle sugar on top of the kansar, garnish it with almond or cashew nut chops and serve immediately.
